Butter chicken like chicken tikka masala, is one of the most famous Indian curries across the world and for all the right logics. This tempting chicken recipe is also famous by its Hindi name – murgh makhni. The flavor of the creamy bright coloured masala with pieces of roast chicken in it is an extraordinary one and I love mine with some smooth rumali rotis, though you can have it with any kind of Indian flatbread too. Like its North Indian roots and name itself recommends good portions of butter go into the preparing of this recipe. One taste and you are going to delight that this is the finest butter chicken you have ever had.

  2. 1. Chicken cut into 1½ inch pieces 500 grams
  3. 2. 3 tablespoons butter
  4. 3. 2 teaspoons Kashmiri red chilli powder
  5. 4. 2 tablespoons Lemon juice
  6. 5. Salt to taste
  7. Marinade
  8. 1. 1 cup thick yogurt
  9. 2. 1 1/2 teaspoons ginger paste
  10. 3. 1 1/2 teaspoons garlic paste
  11. 4. 1 teaspoon red chilli powder
  12. 5. 1 teaspoon garam masala powder
  13. 6. Salt to taste
  14. 7. 3 teaspoons mustard oil
  15. 8. Makhani gravy
  16. 9. 14 medium tomatos roughly chopped
  17. 10. 5 tablespoons nutralite
  18. 11. 5 green cardamoms
  19. 12. 2 gram mace
  20. 13. 1 1/2 teaspoon ginger paste
  21. 14. 1 1/2 teaspoon garlic paste
  22. 15. Salt to taste
  23. 16. 1 1/2 teaspoon red chilli powder (deghi mirch)
  24. 17. Dried fenugreek leaves (kasoori methi) roasted and crushed 1/2 teaspoon
  25. 18. 2 tablespoons honey
  26. 19. 3 1/2 tablespoons fresh cream
Instructions
  1. Directions for preparation
  2. 1. Cut the chicken pieces all over with a knife. Part them in a large basin and mix the salt, 1/2 tablespoon red chilli powder, 2 1/2 nutralite and little lemon juice and mix well.
  3. 2. Cover the basin with a cling film and keep aside to marinate for thirty minutes in a refrigerator.
  4. 3. For the marinade, mix together 1 cup thick yogurt, 1 1/2 table spoon ginger paste, 1 1/2 table spoon garlic paste, 1/2 tablespoon chilli powder, salt and 1 table spoon garam masala powder. Add the 2 table spoons of mustard oil and mix.
  5. 4. Combine the chicken and mix well so that all the chicken slices are well cover with the marinade. Cover the bowl with cling film and keep it in the fridge to marinate for about three hours. For the sauce puree the tomatoes till soft.
  6. 5. Heat two tablespoons of Nutralite in a deep non stick pan on small heat. Combine the 4 green cardamoms and baton and bake till fragrant. Combine the ginger paste and garlic paste and sauté for a 2-3 minutes.
  7. 6. Combine the pureed tomatoes, salt, little red chilli powder and bake, stirring occasionally, for few minutes. Preheat the gas stove.
  8. 7. Open the lid and simply grease the platform. Keep the chicken slices, Wrapping with the lid and cook till the chicken slices are done.
  9. 8. Combine the grilled 1/2 tablespoon and crushed kasuri methi to the gravy and mix. Combine the remaining Nutralite and bake for a few minutes. Combine the honey and cream and mix well.
  10. 9. Cook for few minutes more. Combine the chicken pieces and cook for few minutes. Serve hot with naan.

Step by step to make butter chicken masala

Step 1

Step 4

Combine the chicken and mix well so that all the chicken slices are well cover with the marinade. Cover the bowl with cling film and keep it in the fridge to marinate for about three hours. Step 5

String the chicken pieces onto skewers and baked in the preheated oven or a moderately hot tandoor for twelve to fifteen minutes or until almost done.

Heat one and half tablespoons of Nutralite in a deep non stick pan on small heat. Combine the green cardamoms and baton and bake till fragrant. Combine the ginger paste and garlic paste and sauté for a 2-3 minutes.

Step 6

Step 7

Open the lid and simply grease the platform. Keep the chicken slices, Wrapping with the lid and cook till the chicken slices are done.

Step 8

Combine the grilled and crushed kasuri methi to the gravy and mix. Combine the remaining Nutralite and bake for a few minutes. Combine the honey and cream and mix well.

Step 9

Cook for five minutes more. Combine the chicken pieces and cook for four minutes. Serve hot with naan.
